German Potato Salad

Story behind the recipe: This is a traditional dish that has been passed down through the generations that my family enjoys at family gatherings and picnics. It's a perfect accompaniment for brats and sauerkraut.

Description of the dish: Traditional German-style potato salad. May be served hot or cold - both are equally good.

This recipe makes 10 to 12 servings.

Time to prep: 10 to 15 minutes

Time to cook: 30 minutes

Ingredients:

  • 4 lbs small red potatoes, cooked
  • 4 slices of bacon, diced
  • 1/2 cup bacon drippings
  • 1/2 cup sugar
  • 3 tablespoons flour
  • 2 tsp salt (I use a little less)
  • 1/4 tsp pepper (I am very generous with the pepper more like 1/2 tsp)
  • 1 cup white vinegar
  • 1 cup water
  • 4 green onions, chopped

Cooking Instructions:

  1. Fry bacon until golden brown.
  2. Drain on paper towel and crumble.
  3. Add additional bacon grease to make 1/2 cup.
  4. Blend sugar, flour, salt and pepper.
  5. Stir into bacon drippings to make smooth paste.
  6. Add vinegar and water.
  7. Bring to boil and simmer 2 to 3 minutes until sauce is slightly thickened.
  8. Slice potatoes into the warm sauce and stir to coat.
  9. Stir in green onions and half the bacon bits.
  10. Pour into serving container and top with remaining bacon bits.

Recommended side dishes: A must for Oktoberfest!
