Cracker Toffee aka "Christmas Crack"

Ingredients

  • 2 packaged sleeves of Saltine Crackers
  • 1 cup (two sticks) salted butter (not margarine)
  • 1 cup light brown sugar, firmly packed. ÌýDark brown sugar is good too
  • 12 oz bittersweet chocolate chips (one bag). ÌýAdd more if desired
  • 1 cup sliced almonds or get creative with walnuts/mini marshmallows, crushed candy canes, mini m&m's etc.

Directions

Prepare

  • Preheat oven to 400 degrees
  • Line a 13x9" cookie sheet (that has edges) with either parchment paper or foil sprayed with Pam. ÌýMake sure the paper or foil goes up and over the edges
  • Add crackers in a single layer on the cookie sheet. ÌýFeel free to break the crackers to make them fit in the pan.

Make the toffee mixture

  • In a medium saucepan over medium heat, melt the butter and brown sugar stirring slowly. ÌýWhen the mixture starts to bubble, cook for 3 minutes more while stirring. ÌýThe mixture will start to thicken but still be pourable.

Pour & Bake

  • Pour the toffee mixture over the crackers. ÌýMake sure every cracker is covered. ÌýIf the crackers shift around, just move them back into place
  • Bake for 5 minutes
  • Remove from cookie sheet from oven and place on a counter or stove topÌý

Add Chocolate

  • Sprinkle the whole bag of chocolate chips evenly on top of the hot buttered toffee crackers and wait a few minutes.
  • When the chips soften, use a knife or spatula to spread chocolate over the surface

Add Topping(s)

  • Spread sliced almonds or favorite topping over the chocolate = have fun being creative
  • Jiggle the cookie sheet slightly to make sure the toppings stick into the chocolate

Wait until hardenedÌý(yes, we know it's hard!)

  • Wait overnight, or 2 hours if you put the sheet in the fridge
  • Break into bite sized pieces, when firm.
  • Store refrigerated in an airtight container.
  • Enjoy!! and try not to eat the whole batch for breakfast.
