Ingredients

  • 2 tbsp olive oilÌý
  • 40 ounces chicken breasts, chopped into bite-sized pieces
  • 10 large garlic cloves, chopped
  • 3 cups bell pepper, chopped
  • 5 cups zucchini, chopped
  • (2)14 oz can diced tomatoes with green chilis
  • 2 tablespoonÌý+ 2 teaspoonÌýtaco seasoningÌý
  • 2 teaspoon cumin
  • 1 teaspoon sea salt, optional
  • 1 teaspoon ground black pepperÌý
  • 2 cup low-fat Mexican cheese blend
  • 1 cup green onions- divided ( save ½ for garnish)
  • 1/2 cup cilantro, chopped (optional garnish)

Directions

  • Cut chicken into bite-sized pieces.
  • Chop garlic, bell pepper, and zucchini.Ìý
  • Add oil to a large skillet on low-medium heat. ÌýAdd 1/2 cup green onion, garlic, and bell pepper; sauté for 3 minutes, stirring occasionally.
  • Add chicken to skillet and sprinkle with cumin and black pepper. Cook for about 4 minutes, stirring occasionally.
  • Add tomatoes, zucchini, and taco seasoning. Stir, cover, and cook on low-medium heat for about 6 minutes.
  • Cook Tip: Do not overcook the chicken. Ideally, it should be done when the vegetables are cooked.
  • Sprinkle with cheese, cover, and cook for a few minutes or until cheese has melted. Top with green onion and cilantro.
